Whoa! where did time go?!

so, i missed september through december recipes, wow! some may be wondering what happened to me. well, in september, i got a job for the first time in 10 years! nothing major, i work at babies r us, but i love it. so far. i started in octoberand had no motivation to cook after work. november came and the monday before thanksgiving, i got voluntold i was having turkey at my house…

now, it is a week from christmas and things are chaotic. i need to start sticking to what i started! here’s to restarting in january and catching up on those recipes i missed!

so, i decided to blog this month’s recipes all at once. i made the berry galettes last week and the popovers tonight…

these berry galettes were super easy. AND super good :) i used blueberries in one and rainier cherries in the other. these things did NOT last long at all!

the cherries were waiting their turn. i had strawberries, but decided to let the kids go to town on them, lol, just to keep them out of the blueberries and the cherries!

the cherry one was tart more than sweet. perfect compliment to the sweet blueberries :)

lol, i wanted to get the berry galettes done on the 7th, it was my birthday, after all, and then, i wanted to post for julia child’s 100th birthday, but you all can see how that went, huh? lol

TWD blueberry yumminess!

i feel lazy, this is the only recipe i did this month. i had all intentions of doing the other 2, but no luck in finding the semolina flour and time got away from me on all of it. :) but, i did the best recipe, i think.

so, to start. i dragged this one out all month. i tried to do this in my processor, but forgot to cut the recipe in half! oops!

so, i moved it to a bowl and did it by hand. the butter didn’t incorporate perfectly, but that did not effect the outcome of this one!

so, i wrapped this in quarters because i knew i would eed all 4… i made 2 pies! and a good thing i did too, lol, because they disappeared… too many people wanted some of it ;) and this is one time i don’t really mind sharing a slice of the pie!

lot of pics of the fruit. i LOVE fruit. i mean, if i had my choice, i’d eat fruit ALL the time. but, budgets don’t always allow or that. :) no matter, i have fruit around as often as i can, which sometimes, isn’t all that often. because everyone here eats it right away!

it came out runny. not sure if i didn’t cook the fruit down enough or what, but we didn’t care. called it pie-like cobbler and ate it anyway. :)

the ice cream made it :) we had a whole pie to ourselves, but shared the other. half to my grandparents (where i hope my grandpa had some! my grandma was drooling as soon as we walked in! she has horrible sweet tooth! “it’s fruit, it has to be healthy!”) and half to some friends of mine.

so, all in all, i’m very glad i did this one! i wish my mom could have tasted it, she LOVES peaches and nectarines.

TWD french strawberry cake

yep, i’m over a week late. been just.. well, as a great song goes, there ain’t no cure for the summertime blues!

not much to say about this one. it was good. yummy! but, i’m still not sure if it was worth the time it took to whip the eggs and the cream.

it was pretty cool to have homemade whipped cream, yum! but, it took quite a bit of arm work! (i didn’t wash the whisk attachment of my mixer)

anyway, on to pics!

the cake cooling. it turned out kind of dense and thin. i wasn’t sure if i would be able to cut it into halves, let alone thirds!

my little strawberry thief! she had just come in from outside (hence the dirty face and hands!) and i turned around and caught her reaching into the bowl and snagging strawberries while the cake cooled! i don’t know how many she got, but i used them anyway. we haven’t died yet from her grubby hands, so i guess we’ll be fine.

my husband worked his kitchen magic yet again :) he was able to cut that thin cake in half! yay!

i had plenty of berries, even after the berry theft, so instead of using fresh berries on top, i just put the juiced ones on. maybe not as pretty, but yum!

the cake was a hit, but not something i would do all the time. unless it needs to be homemade, i will likely just use cool whip and shortcake next time. i loved the recipe, but for the time it took, i will go store bought unless it’s for a special occasion. :)

TWD oasis naan

well, i am a day late an a dollar short! lol! for today’s recipe (or well, yesterday at this point!) look at http://alwaysaddmorebutter.wordpress.com/ and http://gaaarp.wordpress.com/

i love naan. very much. i decided to make an indian/asian meal. however, i forgot to make hummus! *sigh* it just wasn’t the same without the homemade hummus!

first off, though, i’m trying my hand at growing cilantro (yes, this is way off topic!!).

raw ingredients.

fried rice

1 – 2 green onions, as desired
2 large eggs
1 tsp salt
pepper to taste
4 TBS oil for stir-frying, or as needed
4 cups cold cooked rice
1 – 2 TBS light soy sauce or oyster sauce, as desired

wash and finely chop green onion

lightly beat eggs with salt and pepper

heat a wok or frying pan and add 2 TBS oil. when oil is hot, add the eggs. cook, stirring, until they are lightly scrambled but not too dry. remove the eggs and clean the pan.

add 2 TBS oil. add the rice. stir-fry for a few minutes, using chopsticks or a wooden spoon to break apart. stir in sauce as desired.

when the rice is heated through, add the scrambled egg back into the pan. mix thoroughly. stir in green onion.

serve hot

SALT AND PEPPER CHICKEN

chicken breast cut into bite-sized pieces
2 TBS soy sauce
3 TBS 5-spice powder
1/2 TBS rice wine vinegar
1/8 tsp black pepper powder
1 tsp sugar
1 egg yolk
a bunch of thai basil leaves
1 cup potato starch or corn flour
oil for deep frying

marinate the chicken with the seasonings, including the egg yolk for 2 hours in the fridge. when ready for deep-fry, put 1 cup of the flour on a flat plate. add chicken to the flour and coat evenly. heat up a wok or deep fryer with oil and fry the chicken pieces until they turn golden brown. transfer the chicken to a paper line plate to soak up the excess oil.

deep fry the basil leaves until crispy and garnish the top of the fried chicken.

serve immediately

ALOO PHUJIA (SPICY FRIED POTATOES)

1 onion, chopped
1/4 cul vegetable oil
1 pound potatoes, peels and cubed
1 tsp salt
1/2 tsp cayenne pepper
1/2 tsp ground tumeric
1/4 tsp ground cumin
2 tomatoes, chopped

heat oil in a medium frying pan and lightly brown the onions

stir in salt, cayenne, tumeric and cumin. add potatoes and cook about 10 minutes, stirring occasionally

add tomatoes, cover pan and cook until potatoes are soft, about 10 minutes

TWD pecan sticky buns

yes, i’m a week late posting this. my life took a turn i never expected. i am dedicating this post to my mom, deborah kay perry, november 14, 1957 to may 12, 2012. i love you very much, and i miss you even more than i ever thought i could miss anyone.

when i made the hungarian shortbread, i snuck some to her, and she was looking forward to this recipe. unfortunately, she passed the day i was going to start it.

my yeast would not work. i started this recipe 3 times and no rise from it. at all. so, after buying new yeast, it finally rose. i wish i had pictures of it! lol, it was pretty funny.

i went to my husband’s aunt’s house. she has a nice kitchen aid mixer, thankfully. otherwise, i would not have been able to do this recipe.

this was by far the hardest recipe i think i have ever done. not because it was difficult, nor because my first 3 attempts did not rise, but because i hurt. my mom, the person i called about every day with some of the most inane things to talk about, rants, kids, whatever, was gone. suddenly. so, between trips to the funeral home and her house and family, i pushed myself to make these buns!

i was a little disappointed in them. they seemed a little bland to me, not as sweet as a cinnamon roll, which i expected them to taste like, i guess. the dough was great, flaky and layered, but was lacking something. or it may just have been me.

TWD Hungarian Shortbread

so another recipe is due and what did i do? forget what week it was! lol, here it is the 1st, though, and i got this done just in time.

a pound of butter went into this. rich shortbread, and yummy. i didn’t have the right pan, so i tried 2 loaf pans.

so, grating the old fashioned way. well, i grated the first one and my hubby grated the second. it looks pretty. i used a sugar free strawberry jam.

TWD pizza rustica

well, i made this last night, mainly because i had no time over the weekend like i had planned.

so, because i didn’t get done until late, and have been running today, this post is late!

TWD irish soda bread

so, here it is, another st paddy’s day. and new roommates, so a house full of boys. so, after a long night last night, and an early morning taking my hubby to work, i was very glad this recipe was short, sweet and to the point.

not much to it here. got the dry ingredients together. i realized at the last minute i had no buttermilk, but, 1 TBS lemon juice per cup worked well.

i added green food coloring to my bread. put a few drops in the milk and then mixed it all together. i wish i had a pic of my hands! they were a mess.

in the oven. this was after 20 minutes. i guess, since the oven was on 200 all day cooking some corned beef, it didn’t take long to cook.

Celebrating National Procrastination Week With Rugalach!!!

first of all, do NOT ask me to pronounce these cookies. i can tell you they look good, though!

so, let’s start with yesterday: monday, march 5.

3 sticks of butter, a package of cream cheese, a little salt, sugar and flour. as you can see, i made sure i didn’t forget the salt!!!

i was going to work on these saturday, but my husband decided this past weekend was a good time to fix the screen door. funny, thing, though, the screen he picked out, while nice, was too narrow for the doorway. he found this out after he cut the length of the door down, though. so, we spent all weekend running around trying to fix it. and he did, and did a good job of it. all it took was a 1X4 screwed in on the side of the door frame.

the dough was sticky. and slimy feeling, i guess it was all that butter. i finally caved in and quit using the mixer. no wonder it said to use the paddle! it would have made things easier, but my hand mixer has a whisk, beaters and dough hooks. the beaters were… well, not working. they filled up with the dough quick!

good timing with this step! i got these babies in the fridge and then put the little one down for a nap. and lay there by her to read a book until it was time to work some more. and if i dozed off, who’s to know? it’s just me and her during the day and she was asleep, so she doesn’t have to know either!!

there’s my cherries and pomegranate infused cranberries in my beautiful bowl my husband got me while he was in afganistan. i love my bowls, i have 2 this size and 1 bigger. he wants me to use them as a mixing bowl, but the sides are too short for that. i can’t tell him that, though! ;) but, i still like them a lot.

the sugar and nut mix. i used glazed walnuts. and had a few leftover. i used 2 packages of them, but the leftovers were gone quick!

my first set of logs. they turned out pretty. but, i misjudged the amount of stuffing, so…

i put it in the second set of logs… and they were over stuffed. ah, well. these are going to be good!

i put them in the fridge, then my husband decided we needed to go take care of some things. by then. it was after 5 p.m. so, i figured to leave these in the fridge over night. it worked out well. we ate pizza hut (mainly because the kitchen was a mess! dishes were done, but everything else was covered in baking things!) and by the time we came home, i wanted nothing more than to go to bed.

so, i got up this morning and went back to work. i cut the logs, starting with the overstuffed ones. they don’t look too bad here, i guess! and i bet they taste even better.

here are the overstuffed cookies baked. for some reason, my camera quit on me (i think the batteries died on me) when i took the pics of the smaller logs, but you’ll just have to trust me when i say they look better.
