Cooking For Tuesdays

Just a little of what I like to cook.

White Bread Revisited

so, 3 weeks ago now we made white bread for tuesdays with dorie. I had left out the salt and my bread was bland 😦 (check out the february 7 post).

well, tonight, i decided to fix that. my hubby helped, again, but he overworked the bread just a little. it didn’t rise or look as pretty as my first loaves, but one had blueberries in it and the other had cinnamon sugar. yum!!

they turned out awesome! the salt made the difference! 🙂

Tuesdays with Dorie: Yummy Chocolatey Goodness…

yes, i know, that’s not the official name of the recipe, but it is all yummy chocolatey goodness all over… i’m supposed to be trying to lose weight here!! lol

so, before i share my experience, here’s where to go for the hosts: http://someonekitchen.blogspot.com/ and http://cookbookhabit.blogspot.com/

so, let’s start with the dough. i put it in my food processor. i don’t use it nearly enough, that’s for sure. and i remember why. my dishwasher had gone belly-up back in may, and there is a LOT of nooks and crannies to get to in that lid. lol, not to mention all the dishes i wash when i bake something! and last night i had started some cinnamon rolls that i baked this morning for breakfast. so, a ton of baking (or so it seems) today. anyway, back to the dough. it was a lump. left it in the fridge while we went looking for me a pair of boots.

reading about how it could crumble, and knowing my lack of skill with pie dough, i turned to the expert.

poor guy, after returning from a year in afganistan, i make him help me in the kitchen!! he really should expect this by now. i mean as of today, we’ve been married for 15 years… if he doesn’t know me by now, he never will!

Photobucket

he’s such a perfectionist. look at the concentration on his face as he puts the dough in the tart pans. he’s tolerant too. i got a lot of stuff for baking the day he came home! just no kitchen aid. he doesn’t want to pay that much for one… so, i’m looking on ebay. i may just have him talked into one, i’ll just have to show him i need one! 🙂

Photobucket

he wanted to make sure i posted a pic of his work. yeah, he’s modest too, huh?

i mentioned chocolate to my little helper. she ate most of the left over chocolate chips. i think she even went to bed with chocolate on her chin. no one dared wiped it off. she is still re-learning how to sleep in her own bed instead of snuggling up with mama.

Photobucket

i wasn’t sure if 4 biscotti would fit! lol, i used this recipe as an excuse to go to sam’s club and buy a big box of them. i love them with hot chocolate.

Photobucket

i had to get creative with melting the chocolate. i don’t have a metal bowl and well, this worked. just had to be very careful. that’s why i took a pic of the process after i was finished with this step!

Photobucket

my taste tester. he licked spoons and made sure my chocolate chips passed the quality inspection. here he is watching them cook.

Photobucket

almost done 🙂

Photobucket

they’re done and cooling. too bad the kids had to both go to bed before they had a chance to taste these. they’ll eat them tomorrow, during the day, when there is hours before they try to go to sleep.

Photobucket

look at the beautiful texture. yum!!

Photobucket

i think this is a recipe to try again and again. it met my hubby’s picky standards.

and no, i think they are all claimed. sorry.

Tuesdays with Dorie: White Loaves

well, the loaves turned out beautiful. if you want the recipe, you will have to go to .

this as a simple recipe. very simple, and i like simple, lol. except i don’t have a big mixer. definitely something to ask my hubby for. again.

my little hand mixer died a valiant death.

Photobucket

this was before i added the butter. i had to mix it by hand. tough work! ou can see my little helper back there. she can’t get enough of the bread!

Photobucket

it balled up fine, though. 🙂

Photobucket

and while not pretty, it did rise like it was supposed to! this is a first for me and homemade, non-breadmachine, bread.

Photobucket

they seemed too small for the loaf pans,

Photobucket

but, they rose fine that time too. amazing… for me, this was going great!

Photobucket

they turned out so pretty!! however… my 12 year old helper (thanks, cassie!!) was reading off the directions as i cooked. between that and juggling a 2 year old and an 8 year old, i didn’t put the salt in the bread…

and we didn’t catch that until we cut it to eat it!! lol

this is definitely a “do again” recipe! 😀 and this time, i will make sure there are NO distractions, and get the salt in there. i made garlic toast out of it, and it was very good. this morning, gonna dredge it in eggs, sprinkle with cinnamon and sugar, and try it as french toast. lol, i KNOW this bread is good, i’ll just have to be more careful next time!!
